A restaurant order form is a payment form with a menu in it, and the arithmetic that decides whether it is worth running is the same as any payment form's: what the order charges once sales tax is on it, what the card processor keeps and what reaches the restaurant's account. The form takes the dishes and their quantities, an option such as delivery or a rush charge, and the pickup time, and the owner needs to know before the first order that the total the customer sees and the total that lands are two different numbers. Build the lines as the menu reads
Each dish is a line with a unit price and a quantity field; on the worked example two of a $45 dish and one of a $120 platter with a $15 delivery option is a $225 subtotal. A quantity field per line, not a free-text order box, is what makes the total computable.
Put the tax and the processor's rate in before the first order
At 8.25% sales tax the order charges $243.56, and at 2.9% plus $0.30 the processor keeps $7.36, so $236.20 reaches the account and $217.64 stays after the tax is remitted. Your own rates replace the worked example's.
Keep the order as an entry with a pickup time and a status
An order that arrives as an email during service is an order that is late. Each order is an entry with the dishes, the time, the payment and a status from new to closed, so the kitchen and the register read the same list.
